What is SHB (Strictly Hard Bean) Costa Rican coffee?

SHB is Costa Rica's highest altitude-based quality classification, reserved for coffee grown above 1,200 meters. Kochere's Costa Rica Alajuela is grown at 1,300-1,445 meters on micro farms in volcanic loam soils. At higher altitude, cooler temperatures slow cherry maturation, producing denser beans with higher sucrose content. The result is a sweeter, more complex cup — in this case, sweet apple, raisin, and honey — than lower-altitude coffees from the same country.

What is eco-pulped (honey process) coffee?

Eco-pulped or honey process coffee has the cherry skin removed after harvest, but the mucilage — the sticky fruit layer between skin and bean — is left intact during sun-drying. This adds sweetness without the full fermented depth of natural processing, and uses significantly less water than full washing. Costa Rica has adopted eco-pulping widely as a sustainable processing method. The result sits between washed (clean, bright) and natural (fruit-forward, wild).

How does Costa Rican coffee compare to Colombian?

Both are medium-bodied, balanced, and approachable single origins. Colombian Medellin is fully washed with a clean citrus-chocolate profile and structured brightness. Costa Rican Alajuela is eco-pulped (honey processed), which gives it noticeably more sweetness — apple, raisin, and honey — with less perceived acidity. If you prefer a sweeter, rounder cup, choose Costa Rica. For more citrus brightness and structure, choose Colombian.

How fresh is the coffee when it arrives?

How should I store my coffee?

Store in the resealable bag or an airtight, opaque container in a cool, dark place. Avoid refrigeration. Whole beans stay fresh 4-6 weeks; ground is best within 1-2 weeks.
